Truffle Butter

Many women can't remember the first time they had sex, but many will remember the ecstasy of the first time they tasted truffles. Not the sweet, gooey chocolate, but the earthy umami-driven mushroom. This recipe is so simple, but it will raise your reputation as a gourmet cook.

1.  Butter

2.  Truffle paste (this usually is a mixture with Porcini)

The quantities don't matter.​

Mix some of the paste with soft butter.

You can add a squeeze of citrus, a teeny-tiny dash of maple syrup, and for more umami a little shake of MSG.(MSG is not poisonous, like we were led to believe a generation ago.)

You can serve it on poached eggs for the special morning after. Just on toast warms the soul. Put it with rice or pasta and the taste is exquisite. Don't mix it with strong pasta sauce. It is a wonderful sauce for chicken, potatoes, artichoke, and green beans. Or just rub it all over yourself.
